Usually before the meals Russians have snack. Salting, sour and marinated fruits and vegetables, mushrooms make this snack. Till 18th century the main food of Russia was turnip. People boiled it, added to different soups and it was also the filling of pies and cakes, etc. Cabbages were also popular among Russians. The first written messages about this vegetable refer to 12th century. This vegetable eating was taken from Greece and was first spread in Crimea (the former region of Russia, nowadays this region belongs to Ukraine). But later it was transmitted to the North. According to beliefs potatoes appeared in Russia through Siberia and Kamchatka. And it is not occasionally that the northern regions were the first to get used to cook potatoes.
Mushrooms played an important role in the Russian cookery as the Russian forests were rich in mushrooms of different kinds. Fruits were also the favourite ingredients. And Russians even cook the duck filled with apples. First Russians even had the same word to name both fruits and vegetables. And the last vegetable that appeared in Russian was tomato.
