The Cookery of Arab countries such as Syria, Iraq, Saudi Arabia, Lebanon, Libya and Egypt have a lot of specialities as in the principles of cooking as in the number of ingredients that are used for the dish. In Arab cookery people use beef, goat's flesh, veal, bird's meat, beans, rice, vegetables, fresh and tines fruits. Arabs-Muslims do not eat pork at all. But they eat the dishes made of the fish, eggs, and diary products with pleasure. They prefer cheese.

Spices are use in different concentrations. Onion, garlic, olives, red and black pepper, cinnamon and different aromatic plants are often used in the Arab cookeries. Olive oil is rather popular as in neighbour Spain.

Usually Arabs fry and boil their products without oil using. To do that they heat the pan to the temperature 300 C. Proteins of the meat make the thin incrustation keeping the juice of the meat. And in such way meat becomes tender and soft.

The meat soups with beans and rice adding pies and potatoes are also rather popular. The most popular second courses are the fried meat with tomatoes, rice and the maize porridge.

People eat two times a day in Arab countries. Usually they have good breakfast and the same good dinner. They usually don't supper.
